The Simple 4-Step Befach Method
Follow these four easy steps for flawless rice, whether you're using a stovetop pot or a rice cooker.
Step 1: Measure Accurately
The foundation of perfect rice is the right ratio of rice to water. The Golden Ratio for Befach Rice is 1 : 2.
- For every 1 cup of dry Befach Rice, use 2 cups of water.
Step 2: Rinse, Don't Soak
Gently rinse the rice under cool running water for about 30 seconds. This removes any excess surface starch, which is the key to preventing stickiness and achieving separate grains. Avoid soaking the rice, as this can affect the final texture.
Step 3: Cook It Right
On the Stovetop (in a pot):
- Combine the rinsed rice and water in a pot. Add a pinch of salt if desired.
- Bring to a boil over medium-high heat.
- Once boiling, immediately reduce the heat to the lowest possible setting, cover with a tight-fitting lid, and let it simmer for 15-20 minutes. Do not lift the lid!
In a Rice Cooker:
- Combine the rinsed rice and water in the rice cooker bowl.
- Close the lid and press the "Cook" button. The cooker will handle the rest.
Step 4: The Crucial Rest
This is the most important step that most people skip! Once the cooking time is up (or the rice cooker switches to "Warm"), turn off the heat and let the rice sit, covered and undisturbed, for at least 10 minutes. This allows the grains to finish steaming, absorb the remaining moisture, and become perfectly fluffy.
