Easy One-Pot Mexican Rice Recipe
This recipe comes together in one pot, which means maximum flavor and minimal cleanup!
Ingredients:
- 1 tbsp Olive Oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Befach Wellness Rice
- 1 ½ cups Vegetable Broth
- 1 cup Tomato Puree or Crushed Tomatoes
- 1 tsp Cumin Powder
- 1 tsp Chili Powder (adjust to your spice preference)
- ½ tsp Smoked Paprika
- ½ cup Corn (frozen or fresh)
- ½ cup Black Beans, rinsed and drained
- Salt and Pepper to taste
- For Garnish: Fresh coriander, a squeeze of lime, sliced avocado
Instructions:
- Sauté Aromatics: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until soft, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Toast the Rice: Add the uncooked Befach Rice to the pot. Stir and toast for 1-2 minutes until the grains are lightly fragrant. This step adds a wonderful nutty depth of flavor.
- Simmer: Add the vegetable broth, tomato puree, cumin, chili powder, and paprika. Stir everything together, bring to a boil, then reduce the heat to low, cover, and let it simmer for 15 minutes.
- Add Veggies: After 15 minutes, stir in the corn and black beans. Cover again and cook for another 5 minutes, or until the rice is tender and the liquid is absorbed.
