Quick & Healthy Veggie Fried Rice Recipe
The key to this recipe is having all your ingredients prepped and ready to go before you start cooking!
Ingredients:
- 2 cups cooked and chilled Befach Wellness Rice (day-old is best)
- 1 tbsp Sesame Oil
- 1 cup mixed Vegetables, finely chopped (carrots, bell peppers, peas, beans)
- 2 cloves Garlic, minced
- 1 inch Ginger, grated
- 2 Eggs, lightly beaten (optional, or use crumbled paneer/tofu for a veg option)
- 1 tbsp Soy Sauce (low sodium)
- 1 tsp Rice Vinegar
- Freshly ground Black Pepper
- Spring onions, chopped, for garnish
Instructions:
- Prep the Rice: If your chilled rice is clumpy, gently break it up with your hands or a fork. This is the most important step for a good stir-fry.
- Scramble the Protein: Heat half a tablespoon of oil in a large pan or wok over medium-high heat. Add the beaten eggs (or paneer/tofu) and scramble until just cooked. Remove from the pan and set aside.
- Sauté Veggies: Add the remaining oil to the hot pan. Add the garlic and ginger and stir-fry for 30 seconds. Add the mixed vegetables and cook for 3-4 minutes until tender-crisp.
- Combine: Add the chilled Befach Rice to the pan with the vegetables. Stir-fry for 2-3 minutes, breaking up any remaining clumps, until the rice is heated through.
- Season and Serve: Add the scrambled egg/paneer back to the pan. Drizzle with soy sauce and rice vinegar, and season with black pepper. Toss everything together for one final minute. Garnish with fresh spring onions and serve immediately.
