Easy Summer Rice Salad Recipe

Ingredients:

  • 1 cup Befach Wellness Rice, cooked and cooled
  • 1 cup Pomegranate Arils
  • 1 Cucumber, finely diced
  • 1/2 cup Fresh Mint Leaves, chopped
  • 1/2 cup Fresh Coriander, chopped
  • 1/4 cup Toasted Almonds or Pistachios, roughly chopped
  • For the Lemon Vinaigrette: 3 tbsp Olive Oil, 2 tbsp Fresh Lemon Juice, 1 tsp Honey or Maple Syrup, Salt and Pepper to taste

Instructions:

  1. Cook the Rice: Prepare 1 cup of Befach Wellness Rice using our "Rinse, Ratio, Rest" method. Spread the cooked rice on a tray to cool down quickly and completely. This is the secret to a great rice salad.
